The “Meatrix”: hoe diep gaat het konijnenhol binnen de conventionele en rituele slachting?

Analoog met de sci-fi film “The Matrix”, is het bewustzijn van de “echte wereld” soms ver te zoeken. Consumenten blijken onbekend met de gang van zaken in slachthuizen. Maar liefst 78% van de consumenten in Vlaanderen wil geen slachting bijwonen, en toch stellen 8/10 van de mensen zich wel eens vragen bij de condities waarin het dier leefde tijdens het eten van vlees. De attitude van de mens tegenover het slachten van dieren omvat veel tegenstrijdigheden. Het recent debat over het verbod op onverdoofd slachten illustreert dit. Verdienen slachtdieren het recht op een pijnloze dood? Of heeft de vrijheid op het belijden van een godsdienst meer waarde dan het welzijn van dieren? 

Scheiding tussen vlees en vriend.

De attitude van de mens bepaalt de  leefwereld van  vele dieren.  We hebben een onderscheid gemaakt tussen gezelschapsdieren enerzijds en landbouwdieren anderzijds.   Hoewel dit cultureel kan verschillen, blijkt dat er zich doorheen  verschillende  etnische stromingen een nieuwe trend ontwikkeld: de zogenaamde “vlees paradox”. De smaak van vlees wordt wel gewaardeerd, maar de consumptie ervan brengt schuldgevoelens met zich mee. Een eenvoudige verklaring voor dit fenomeen is onze sterke connectie met huisdieren, en de vervreemding van landbouwdieren.

Nieuwe normen en waarden binnen de maatschappij.

De wetenschap toont ons aan dat dieren wel degelijk pijn ervaren en in staat zijn om stress, en zelfs angst, te ervaren. Het resultaat van deze nieuwe kennis is dat het welzijn van dieren een maatschappelijk draagvlak krijgt. Dit is duidelijk te zien bij de implementatie van de Dierenwelzijnswet (1986), en de Verordening bij het beschermen van dieren bij het doden (2009). Dierenrechtenorganisaties gaan nog een stap verder, in hun strijd om ook rechten aan dieren te verlenen. Bij landbouwdieren kunnen we nog niet spreken van rechten in onze samenleving. Het verbeteren van hun welzijn is daarentegen een “hot topic”.

Welzijn voor dieren in slachthuizen, een evidentie?

Op het eerste zicht lijkt dierenwelzijn in slachthuizen een evidentie. Dieren moeten, m.u.v. religieuze slachting, verdoofd zijn vooraleer ze gekeeld worden. Is daarmee dan de kous af? Helaas niet. Het  leven van een dier start bij de geboorte, en ook hier moet welzijn gegarandeerd worden. De selectie op productie heeft een impact op de welzijn van deze dieren. Verder zijn er de, soms bedenkelijke, huisvestingsystemen. Dé hamvraag is: “Zijn consumenten zich hier wel bewust van?”

Is dat wel nodig, al die commotie over de kennislacune van de consument?

De resultaten van de enquête bij de consumenten draaien er niet omheen. De kennis van slachtmethodes is ondermaats bij de Vlaming. Aangezien kennis de attitude stuurt, kunnen we dan ook besluiten dat dit een zwaar werkpunt is. Het is gebleken dat er, doorheen verschillende diersoorten, een geloof heerst in onrealistische bedwelmingstechnieken. Van de 1026 respondenten die de vraag beantwoordden geloofden 24% in verdoving d.m.v. euthanasie met een injectie en 43% dachten dat dieren o.a. met een lokaal verdovingsmiddel zachtaardig bedwelmd werden. Bij de stelling: “drachtige dieren worden nooit geslacht”, zijn 1/5 mensen overtuigd dat dit nooit in de praktijk voorkomt. Verder weet 75% van alle respondenten niet wat een reversibele of omkeerbare verdoving is. Nochtans is deze vorm van verdoving volgens verscheidene religieuze instanties een acceptabel alternatief voor onbedwelmd slachten.

Rituele slachting, een delicaat onderwerp.

In mei 2016 stelt Hermes Sanctorum in een wetsvoorstel een verbod voor op onverdoofd slachten. Nog steeds blijkt de knoop niet doorgehakt in het Vlaams parlement. Hoewel de meerderheid ervoor te vinden is, willen de oppositieleiders een regeringscrisis vermijden en nogmaals in dialoog gaan met de geloofsgemeenschappen. Minister voor Dierenwelzijn Ben Weyts gaf aan een halt te roepen aan de pogingen tot dialoog, aangezien het verbod op ritueel slachten op tijdelijke slachtvloeren hem een proces opleverde, aangespannen door moslimorganisaties. Vele kanalen, zowel voor moslims (Moslim executief, Moslims tegen verdoofd slachten vzw, sociale media,) als voor Joden (Shomre Hadas, Machsike Hadas, Joods actueel, Joodse studenten van Vlaanderen en België,) werden zonder succes gecontacteerd in dit onderzoek. Het blijkt dus dat de openheid tot dialoog op zich reeds een delicate kwestie is voor deze bevolkingsgroepen. In de enquête voor consumenten in Vlaanderen is het aandeel halal consumenten (3%), en koosjer consumenten (1%) beperkt, ondanks de uitgebreide uitnodiging tot participatie.

De risico’s op onnodig pijn en lijden zijn te hoog bij ritueel slachten. Daar is een wetenschappelijke consensus over. De keelsnede is wel degelijk pijnlijk, en de tijd tot fixeren en uitbloeden duurt te lang. Tenslotte moet fixatie bij wet volgens een mechanisch procedé verlopen, maar dit is zeker niet ideaal voor het dier. Ook bij de kantelboxen is er ongeoorloofd lijden, waaronder het opzuigen van bloed (verstikkingsgevoel) alsook het langer tegenstribbelen van dieren.

Conventionele slachting kan ook beter.

Er zijn weliswaar minder risico’s op onnodig pijn en lijden, maar slachten blijft een ingrijpende gebeurtenis. De impact van het transport mag niet onderschat worden. Aanvullend onderzoek over laden, lossen en transporteren zijn dan ook wenselijk, volgens de enquête die voorgelegd werd aan DMO’s (Dierenarts Met Opdracht, tewerkgesteld door het voedselagentschap, om toezicht te houden in slachthuizen). Het drijven, fixeren en correct bedwelmen van dieren vereist een goede vakkennis van slachtpersoneel, wat eveneens naar voor kwam als een werkpunt volgens de dierenartsen.

De sector is een gesloten, statische wereld.

Van alle slachthuizen die uit eigen initiatief gecontacteerd werden, kwam er geen respons. Maar de geslotenheid mag niet leiden tot een ondermaats besef van dierenwelzijn. Soort specifieke checklijsten werden opgesteld als een hulpmiddel voor de Dienst Dierenwelzijn, waarbij niet alleen het welzijn, maar ook de attitude van het slachthuis gemeten kan worden. Voorstellen voor apparatuur dat bedwelming controleert is opgenomen, wat volgens 71% DMO’s erg relevant kan zijn. Het secundair onderwijs voor slachtopleiding bleek erg geïnteresseerd in het onderzoek, wat een mooie belofte is voor de toekomst van de attitudes van slachters.  Tenslotte wordt welzijn een zodanig vaste waarde voor consumenten, dat de industrie deze trend wel zal moeten volgen.
