Verpakkingen: Het oog wil ook wat

Heeft u zich ooit al eens afgevraagd waarom er zoveel verschillende soorten verpakkingen zijn? Of heeft u ook soms het gevoel dat er een groeiende strijd is tussen gezonde en ongezonde producten op de voedingsmarkt? Verpakkingselementen van gezonde en ongezonde producten kunnen namelijk verschillen van elkaar en op deze manier een invloed uitoefenen op de aantrekking van de consument en/of het stimuleren van de aankoop. Maar wat zijn nu eigenlijk de verschillen in het gebruik van verpakkingselementen tussen gezonde en ongezonde snacks?

Voedingsmarkt

Op de voedingsmarkt kan er een belangrijk onderscheid gemaakt worden tussen gezonde en ongezonde voedingsproducten. Een gezonde levensstijl is belangrijk voor consumenten. Gezonde voeding groeit zelfs sneller dan ongezonde voeding. Bedrijven zien ook dat de focus op een gezonde levensstijl steeds belangrijker wordt en trachten hier onder andere via de verpakking op in te spelen.

Communicatiefunctie van verpakkingen

In een competitieve voedingsmarkt zoals vandaag proberen voedingsproducten de aandacht van consumenten te trekken op basis van het ontwerp van de verpakking. De verpakking van een product speelt een belangrijke rol in de aankoopbeslissing van consumenten aangezien het een belangrijk middel is om te communiceren met consumenten in point-of-purchase communicatie. De verpakking van een voedingsproduct communiceert met consumenten via een mix van visuele (i.e., grafische en structurele) en verbale elementen en dit creëert een eerste indruk op basis waarvan consumenten conclusies zullen trekken over andere product attributen. Er is al heel wat onderzoek gedaan rond de impact van verpakkingselementen, maar een objectief overzicht van het gebruik van de elementen ontbrak tot nu toe.

Het uiterlijk van verpakkingen

Consumenten zullen dus door het zien van de verpakking en de bijhorende verpakkingselementen een houding ten opzichte van het product aannemen. Visuele verpakkingselementen zijn kenmerken die het uiterlijk van een product creëren. Deze kenmerken  kunnen onderverdeeld worden in grafische verpakkingselementen, zoals kleur, glans en afbeeldingen, en structurele verpakkingselementen, zoals materiaal, vorm en hersluitbaarheid. Deze verpakkingselementen spelen meer in de op de emoties van consumenten. Het zijn dan ook affectieve verpakkingselementen. Verbale verpakkingselementen zijn elementen die informatie gegeven aan de consument en worden dan ook beschouwd als cognitieve verpakkingselementen. Enkele belangrijke verbale verpakkingselementen zijn gezondheids- en voedingsclaims en het merk van een product.

De verpakking van een product is een belangrijk element om producten verleidelijker te doen ogen. Verpakkingselementen van ongezonde snacks zijn soms verschillend van gezonde snacks en spreken de consument soms meer aan (e.g., ongezonde snacks bevatten meer afbeeldingen en afbeeldingen trekken sneller de aandacht). Grafische verpakkingselementen worden om deze reden dan ook vaker bij ongezonde snacks gebruikt. Verbale verpakkingselementen komen daarentegen vaker bij gezonde snacks voor. Structurele verpakkingselementen komen zowel bij gezonde als ongezonde snacks vaak in bepaalde combinaties voor (e.g., de vorm van een balk in combinatie met een doosje en karton).

Hieruit kan besloten worden dat gezonde snacks dus te weinig inspelen op de emoties van consumenten aangezien zij minder grafische verpakkingselementen en meer cognitieve elementen bevatten dan ongezonde snacks. Het is misschien opportuun voor gezonde snacks om meer affectieve verpakkingselementen te gebruiken in hun verpakkingen om ze op deze manier meer te laten opvallen. Zeker het gebruik van meer afbeeldingen is aangeraden want afbeeldingen creëren een verwachting voor de inhoud van een verpakking en beïnvloeden het beslissingsproces meer dan verbale elementen.

“Gezonde” verpakkingselementen

Indien fabrikanten een product als gezond willen profileren, wordt het op basis van dit onderzoek aangeraden om volgende verpakkingselementen te gebruiken: groen, afbeeldingen van gezonde ingrediënten, balk, karton of papier, doosje, positief geformuleerde voedingsclaim (e.g., suikervrij), minder glanzend tot matte verpakkingen en meer cognitieve elementen (e.g., merk, ingrediënten, voedings- en gezondheidsclaims)

Enerzijds zal een product zich via deze verpakkingselementen als gezond profileren, maar anderzijds is het zoals eerder gezegd misschien meer opportuun voor gezonde producten om ook meer affectieve elementen te gebruiken omdat ze op deze manier meer kunnen opvallen en de aandacht van consumenten trekken.

“Ongezonde” verpakkingselementen

Indien fabrikanten een product als ongezond willen profileren, wordt het op basis van dit onderzoek aangeraden om volgende verpakkingselementen te gebruiken: rood, transparant, afbeeldingen van ongezonde ingrediënten, afbeeldingen van mensen, afbeeldingen van cartoons, zakje, plastic, glanzende verpakkingen en meer affectieve elementen (e.g., afbeeldingen, kleuren, speciale vormen).

Zelfcontrole

Elementen die de houdbaarheid bevorderen zoals hersluitbaarheid en afzonderlijk verpakte porties moeten zowel bij gezonde als ongezonde snacks vaker gebruikt geworden aangezien deze elementen de zelfcontrole bevorderen. Meer dan 40% van de snacks bevatten nochtans geen elementen die de houdbaarheid bevorderen. Dit percentage is nog veel te hoog aangezien consumenten een voorkeur hebben voor elementen die de houdbaarheid en zo ook de zelfcontrole bevorderen. Hier ligt nog een opportuniteit voor fabrikanten. Het is vooral opportuun voor ongezonde producten die consumenten op een gematigde manier willen eten.

Tijd voor verandering?

Er zijn dus wel degelijk verschillen tussen verpakkingen van gezonde en ongezonde snacks. Het is duidelijk dat verpakkingen een belangrijk middel zijn om de aandacht van consumenten te trekken en consumenten te overtuigen. Verpakkingen van gezonde producten gaan minder de aandacht trekken dan verpakkingen van ongezonde producten en dit zou moeten veranderen aangezien een gezonde levensstijl steeds belangrijker wordt voor consumenten.
