Biedt de supermarkt van morgen gratis diëtist aan? Een nieuw inkoopconcept

Alarm! De Wereldgezondheidsorganisatie waarschuwt:

 

“Tegen 2030 kampt Europa met een ‘onafzienbare’ obesitasepidemie”

 

Obesitas, zwaarlijvigheid… U zal ongetwijfeld reeds geïnformeerd zijn met de zich meebrengende, akelige gezondheidsrisico’s. Het verhoogt de kans op hartfalen, vaatvernauwingen, diabetes type II, dikke darmkanker, borstkanker, osteoporose… om de belangrijkste op te noemen.

Niet meteen onder de indruk? ‘So what’ zou u kunnen denken ‘hetgene ik eet, hoeft niemand anders toch te storen’. Toch wel. Zo zullen de gezondheidskosten, gerelateerd aan slechte voedingsgewoonten, door u en ik netjes terugbetaald worden via het sociale zekerheidssysteem. Het maatschappelijk draagvlak van een verantwoord voedingspatroon is daarbij niet enkel gelinkt met de gezondheidsproblematiek. Bepaalde voedingspatronen zijn met name beduidend duurzamer dan andere. Vegetariërs/veganisten meiden uit ideologische overwegingen vlees- en/of zuivelproducten. Een duurzaam voedingspatroon helpt, naast een verbeterd dierenwelzijn en fair trade handel, de ecologische voetafdruk naar beneden te halen. Deze voetafdruk staat in voor het totale grondstofgebruik van menselijke activiteiten. Het zal u misschien verbazen maar de voedingsindustrie heeft indirect (transport, verpakking, afval etc.) een aandeel tussen de 19% en 29% van de globale ecologische voetafdruk. Het drukken van deze voetafdruk is van vitaal belang om de opwarming van de aarde af te wenden en zo haar gekende ecosystemen in stand te houden.

 

 

Wat houdt er u dan eigenlijk tegen duurzaam en gezond in te kopen?

 

De mens is een gewoontedier. Iedereen heeft er wel al bij stilgestaan maar de meerderheid gaat gemakshalve door met het gebruikelijk inkopen. Zodus is een loutere kennisoverdracht niet voldoende om u de winkelkar doordacht te laten vullen. Uit onderzoek blijkt dat u geen geloof of vertrouwen heeft om zelf het gewoonlijke inkopen te doorbreken. Vandaar dat men ook (wijselijk) beroep doet op een diëtist. Alleen zijn consultaties met deze voedingsspecialisten vaak vrij kostelijk en dus vooral weggelegd voor de kapitaalkrachtige en vaak hogeropgeleide bevolking.

 

 

Computer tailored advice. Say what?

 

Computer tailoring is een opkomend instrument dat tot nu toe vooral in de gezondheidswereld gekend staat. Dit omdat het op grootschalig niveau persoonlijk advies aan de man weet te brengen. Computer tailoring bekomt men door betekenisvolle variabelen op te vragen van een individu. Deze informatie wordt op zijn beurt door een algoritme verwerkt om zo finaal op maat gemaakt advies te kunnen meegeven. IBM’s ‘Watson Health’, een op computer tailoring gebaseerd programma, is nu al in staat betere diagnoses te stellen dan uw huisdokter.

U voelt het al aankomen. Waarom zou dit wonderbaarlijk instrument dan niet geëxtraheerd kunnen worden naar een commerciële sector? Zoals dat van een supermarkt. Waarbij een klant, die zich registreert en bereid is om daarbij de nodige informatie te delen, door een aangeboden e-service op maat gemaakt voedingsadvies tevoorschijn ziet getoverd worden. Zoals bij een diëtist, maar dan kosteloos, thuis voor uw computerscherm.

 

 

Een e-service als diëtist.

 

Onze gecomputeriseerde diëtist dient zodus een op maat gemaakt voedingsschema uit te bouwen. Dit rekening houdend met de klant zijn persoonlijke voedingsbenodigdheden en duurzaamheidswens. Het leek wel geschikt om onze diëtist dan ook eerst aan te leren wat een ‘gezond’ en ‘duurzaam’ dieet juist inhoud. Er zwerven heel wat pseudogeleerde (en soms erg bedenkelijke) definities hieromtrent. Daarom werd beslist om zich voor deze e-service enkel te baseren op wetenschappelijk gegronde theorieën en bewijzen.

Zo werd voor het gezondheidsaspect grotendeels de voedingsaanbevelingen van de Belgische Hoge Gezondheidsraad opgenomen. Deze aanbevelingen staan met name in voor het grootste deel van de bevolking. Hierbij (om niet teveel in detail te treden) werd ondervonden dat door de ‘leeftijd’, ‘geslacht’, ‘gewicht’, ‘lengte’, ‘de beroepsactiviteitsgraad’, ‘dagelijkse sportactiviteiten’ en ‘of men wilt afvallen al dan niet’ op te vragen, relatief gemakkelijk de persoonlijke voedingsbehoeften uitberekend kunnen worden. Dit betreft de energie-inname (kilocalorieën), juiste verdeling van de macronutriënten (vetten, koolhydraten, eiwitten) en micronutriënten (vitamines en mineralen). Dit via formules en berekeningen die alledaags door zichzelf respecterende diëtisten gebruikt worden. Daarnaast werd ook aan het praktische aspect van een voedingsschema gedacht. Een advocaat die een lange zaak aan het bepleiten is, zal hoogstwaarschijnlijk enkele maaltijden moeten skippen. Of u passeert als klant in de middag liever een broodjeszaak dan een middagmaal aan te kopen via de e-service? Dan dient u dat mee te geven. Zo berekend onze gecomputeriseerde diëtist enkel nog de benodigdheden voor de aangegeven maaltijden.

Voor het duurzaamheidsaspect werd uitberekend hoeveel broeikasgassen u mag uitstoten m.b.t. het aankopen van etenswaren om als ‘ecologisch voedingsconsument’ aanschouwd te worden. Dit staat vast op 3,93kg CO2e/capita/dag (voor elk broeikasgas bestaat een CO2 equivalent, deze staat in voor de vervuiling van het gas in verhouding met CO2). Om deze duurzaamheidsgrens niet te overschrijden dient de gemiddelde consument wel erg veel toe te geven. U moet al vegetariër (3,81kg CO2e/capita/dag) worden om de norm te halen. Vermoedelijk heeft niet iedereen deze wens. Daarom werd gekozen om u als klant zelf te laten kiezen hoe milieubewust u wilt inkopen. Zo zal gekozen dienen te worden uit de drie belangrijkste voedingspatronen die de duurzaamheid van uw dieet bepalen. Het al dan niet eten van vlees of zuivelproducten geldt als belangrijkste factor. Daarnaast kan u uw uitstoot nog naar beneden halen door te kiezen voor een dieet gebaseerd op lokaal en seizoensgebonden en/of biologische producten.

Een gewenst dieet bestaat niet uit cijfers maar uit maaltijden. Daarom gaat de e-service nog een stap verder. Uw berekende benodigdheden zullen nadien met het producten- en gerechtengamma van de supermarkt vergeleken worden. uiteindelijk zal de klant een waaier aan maaltijdkeuzes voorgeschoteld krijgen. Dit voor elke maaltijd die hij via de e–service wilt inkopen. De maaltijdkeuzes zullen bestaan uit producten en gerechten met karakteristieken passend bij de duurzaamheidswens en op maat gemaakt voor de gezondheid.

 

 

Eindafhandeling

 

Betalen voor uw eten zal ook hier gedaan dienen te worden. Enkel zal deze keer naast een betalingsbewijs ook een voedingsschema mee worden gegeven. Waarbij voor elke geselecteerde maaltijd de producten, nutritionele waarden en een bereidingswijze worden meegegeven. Met welk excuus probeert u nu nog weg te komen om uw consumptiegedrag niet te bevorderen? U kunt aan de slag!
